Spice up your weekday dinner with this simple kangaroo recipe
Ingredients for two people:
2 Kangaroo steaks – approx 150-200g per person
2 tsp coriander seeds
1/2 tsp fennel seed
1 tbsp of olive oil
Crush the seeds using a mortar and pestle then add the olive oil and rub over kangaroo 3 mins before cooking. Cook the kangaroo in a hot pan or on the barbeque, leaving rare inside.
Serve with your choice of fresh steamed vegetables or garden salad.
