I got an e-mail last week from a client with this comment “Some suggested snacks, I am bored!!!”

See below for some different suggestions. I hope this will help…………

Guacamole Dip With Wrapped Chicken and Vegetables Sticks
Serves 2
1 avocado
½ red capsicum
¼ red onion
¼ cup parsley
Dash of lemon juice

Mash avocado up with a fork, add finely diced capsicum, red onion, parsley and lemon juice, mix well

cucumber/carrot/celery

100-120g thinly sliced deli chicken, wrap the chicken around the chosen vegetable sticks and dip in the guacamole.

Mix It Up
Serves 1
40-60g Protein finely diced e.g. chicken, turkey, left over beef, tuna
¼ avocado or homemade mayonnaise
¼ zucchini finely diced or other vegetable

Mix well, you can add any fresh herbs for different flavors.

Salmon Rolls

Serves 2
1 cup Sweet Potato
1 Avocado
1 Tbs Lime Juice
1 Tbs Olive Oil
2 Gloves Garlic
120g Smoked Salmon

Instructions
Boil the sweet potato until it softens. Mash together the avocado and sweet potato and add finely chopped garlic, the lime juice and olive oil. Allow to cool in the fridge. Lay out the salmon in strips and place a few spoons of the mash on the salmon. Roll the salmon up like a sushi roll.

Paleo Candybars
Great option for you with a sweet tooth, but have in moderation.

Ingredients
3-4 Tbsp coconut oil
1/4 cup carob powder or cocoa (optional)
1/2 cups ground nuts (almonds, hazelnuts)
3/4 cups dried shredded coconut
1 Tbsp or more to taste honey (optional)

Instructions
1. Start by melting the honey and oil in a saucepan over medium heat on the stove
2. Add carob and nuts and coconut
3. Form into a square by dumping into a small baking sheet and refrigerate or freeze until hard
4. Cut and eat
Simple Stuffed Portobello
This is like an open sandwich but without the bread.

Ingredients

Portobello mushroom caps
1 tin tuna, drained. (If using fresh tuna, sear or cook to desired temperature)
1/2 medium Avocado
Pinch of cayenne pepper or chili flakes to taste
Sea salt, optional
Fresh or dried garlic, optional
Mixed-color peppercorns, optional

Instructions
1. Lightly grill, sauté, or roast the portobello caps, if desired, and set aside.
2. Mash/mix all other ingredients together in a bowl, then stuff into portobello caps
3. Enjoy as a small satisfying snack

Omelette Muffins

Makes 12

6 eggs
1 cup egg whites (extra egg whites as the mix sets better)
1 cup diced ham
1 cup diced red pepper
½ cup sliced small mushrooms
¼ cup diced onions

Add anything else you want, mix all ingredients together and pour into muffin trays (lined with paper cups or sprayed will cooking spray).
Cook for 20-30 minutes at 180° C, until set. Take out of muffin trays and leave to cool. Keep in fridge or freezer and reheat for a quick snack.

Other great snacks that are fast and simple, just mix in a small container and bring with you.
1 boiled egg, cucumber, ¼ avocado
Low fat cottage cheese, berries, 3-6 nuts or shredded coconut
1 tin of tuna, home made mayonnaise, rocket and red capsicum
50g left over chicken, home made pesto, tomato

I always see my snacks as a mini meal. I often have a little bit left over from my dinner the night before that was not enough for a whole lunch, which makes it a perfect meal for a snack.
