Red Cabbage Slaw with Apple and Pine Nuts

I love working with the team that we have at Ignite. There is a strong work ethic, but we know how to have fun together too. Working and training with people who are passionate about the same things as me is priceless. I’ve been lucky enough to have competed in the CrossFit Games at ‘The Ranch’ in 2009.
I came up with this little gem last week when I was looking for something different to put together for dinner and had a limited selection of ingredients on hand.

Ingredients:
Half red cabbage, finely shredded
2 small red apples, cored and sliced thinly
1/4 red onion, finely diced
Handful of pine nuts, gently toasted
1 – 2 tbsp grated Parmesan
1-2 tbsp olive oil
Juice of 1/2 lemon

Method:
Mix cabbage, apple, onion and toasted pine nuts in a bowl. Mix olive oil and lemon juice together and mix through the salad.

Finally, add the Parmesan to the salad just before serving. Enjoy!
