If you love fajitas, but don’t want the floury tortilla, you can still enjoy a great meal without that addition.
fajita chicken ingredients:
500g chicken tenderloins
1 red capsicum cut into strips
1 green capsicum cut into strips
1 red onion cut into strips
1 clove garlic (crushed)
1tsp ground cumin
1 tsp ground coriander (Cilantro)
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp cayenne pepper
sea salt & black pepper
3 tbsp olive oil
Marinade the chicken in the garlic and spices and olive oil. Meanwhile slowly fry the capsicum and onion in a large pan over low heat until soft. When cooked, remove from pan and add chicken. Cook over medium to low heat until cooked through, then add the capsicum and onion back to pan, mix together and it’s ready to serve.
Guacamole ingredients:
1-2 avocados mashed
1 clove garlic, crushed
1 red chilli, finely chopped (de-seeded if you don’t want too much heat)
Juice of half a lime
Mix all ingredients together and it’s ready to serve
Tomato Salsa ingredients:
1 punnet of cherry tomatoes (halved and quartered – mix it up)
2 vine ripened tomatoes, chopped into cubes
1 shallot, finely chopped
chopped coriander leaves (you decide how much)
Juice of one lime
Mix all ingredients together and it’s ready to serve
Serve with a green salad and mix and match your ingredients for a delicious Mexican experience
