Homemade Condiments

It is easy to forget that we can add homemade condiments to our meal to make the whole dish taste better and more interesting.
Below are 3 condiments that work perfect with your lunches and dinner.

 
Garlic, Pistachio, Mint, chilli chutney
If you are into chutney as a condiment this one is especially good for beef and is Paleo friendly.  If you like more spice in your chutney just add some chilli paste.

Ingredients
1 clove garlic
1 cup pistachios
1 tbsp chilli paste
1 handful whole mint leaves
Olive oil Recipe

Method
Roughly chop garlic and pistachios
Remove whole mint leaves from stems
Start a small cast iron pan on med heat with olive oil
Add garlic, cook for 2 mins until it starts to colour
Add pistachios, toast for around 2 mins
Add chilli paste, mint leaves, and a bit more olive oil, cook for 1 min, be careful not to burn.

Use to top your favourite red meat!

Avocado Mayonnaise

Ingredients
1 egg+ 1 yolk
1 tsp prepared yellow mustard
dash of salt
1 1/2  cup avocado oil
2 tbsp lemon juice

Method
Whisk together eggs, mustard and salt until they become slightly frothy. Begin pouring in avocado oil in a very small stream while whisking vigorously. Continue streaming in oil until all is incorporated. This should take you about 5-8 minute. Or use a food processor with the same method (will just save the hard work of 5-8 minutes of whisking) Whisk in lemon juice and enjoy!

Lemon mustard dressing

Ingredients
1/4 cup olive oil
Juice of 1 small lemon
Grated lemon peel, finely chopped
1 teaspoon dried thyme
1 Tbsp mustard (prefer brown)
Salt & pepper

Method
Mix thyme & lemon juice together and let sit for 5 minutes. This will soften the thyme. Add all other ingredients, seasoning with salt & pepper to taste. Put into a jar, screw on lid, and shake shake shake!

Store leftovers in fridge up to one week
