Summer is just around the corner and this is a great, simple dish to share with friends on a warm summer’s day. This recipe is inspired by Rick Stein – the king of seafood cooking.
Ingredients:
20 large green prawns, unpeeled
2 tbsp olive oil
zest & juice of a large lemon
3 cloves garlic, finely chopped
1 tsp cayenne pepper
a handful chopped flat leafed parsley
freshly ground sea salt and black pepper
Heat the oil in a large frying pan or wok and add the prawns and toss them over a high heat for five minutes. Add the salt, pepper and cayenne.
Pour half of the lemon juice over the prawns, allow to cook until the lemon juice has evaporated.
Take the prawns off the heats and add the garlic, parsley and lemon zest.
Transfer to a large serving bowl and serve.
